Wanted to share this super yummy and healthy recipe!
And these super cute kids talking about how the older one cut the little one's hair (no these are not my kids, I just could so see this happening at my house!)

Cauliflower Fried Rice!
I never thought this would be any good, but figured I would try it and it would be one of those meals I eat a little then snack for the rest of the meal on something I really liked! Boy was I wrong, I had seconds - maybe even thirds!
Now I didn't take any fancy pictures, I am working myself up to that point!
Here is what you need:
- 3 cups of grated raw cauliflower (use a cheese grater or food processor) - It takes about a bag and a half of the Trader Joe's bagged cauliflower.
- 1/2 cup frozen peas
- 1/2 cup carrots, thinly sliced - I used the shredded carrots from TJ's
- 3-4 garlic cloves, minced (for the kids I omitted the onions and garlic)
- 1/2 cup onion, diced - I used the pre-cut onions from TJ's
- 1/2 TBSP olive oil
- 2 eggs (or 4 egg whites) scrambled
- 3 TBSP soy sauce
1. In a large pan, saute garlic and onions in olive oil on a
medium/high heat, until onions become soft and transparent. (about 2-3
minutes)
2. Next add in peas, and carrots and cook until carrots begin to soften and peas are heated through, about 3-4 minutes
3. Next stir in scrambled eggs , cauliflower and soy sauce. Cook stirring frequently for about 5-7 more minutes.
When I made it just for the adults, I added in mushrooms which were great and didn't feel like meat was missing to be complete.
